hellooooooooooo foodfans!
i am not sad to say that we had a very takeout heavy week last week. it was just one of those weeks where i was too tired to do much, so we leaned heavily on door dash and that’s that on that. so this is light on recipes, but heavy on FLAVOUR. which is most important.
the week before last, i received my copy of cook this book and played around with a few recipes that i thought would be kid friendly. and it turns out that they were! here’s what i made:
recipe 1) peanutty pork noods with celery. since otis is a vegetarian and we don’t usually eat pork, i decided to just toast/umami some chopped walnuts by adding some tamari and sesame oil, and use those in place of the pork. it totally worked! everyone loved these noodles. peanut butter noodles are an easy sell for kids who love peanut butter as much as mine do.
recipe 2) minty lamb meatballs with crispy cabbage and tahini. now - again, otis isn’t eating meat, so i decided to try and make a lentil “meatball” (otis calls meatballs neatballs, which is actually a perfect name for a vegetarian meatball. so let’s just say i made neatballs) in place of the lamb situation. i swapped mint for parsley because i don’t care for mint, and riffed on this recipe. then i roasted up the cabbage and made tahini sauce like molly said to, added some tabbouleh i had leftover from a delivery the day before, and this was a TASTY dinner. basically lentil falafels. everyone slammed it, EVEN the cabbage!
so i guess i didn’t technically make the recipe, but in my opinion, most recipes are just a jumping off point to start negotiations. i love to get creative! go rogue!
here are some other things we ate that caused next to no drama:
pizza. always. (we did grandma pies with store bought dough, sauce, choose your own toppings. a friday classic!)
frozen chicken nuggets (fake chicken ones), frozen fries (not sorry) and then i fried up some wilting broccolini with lemon, medjool dates & added feta and sunflower seeds on top. i chopped this up small for the kiddos, they ate most of it! sometimes you just gotta serve a nugget!
i have more ambitious food plans this week, but i wanted to share these ideas just in case you needed some! neatballs and peanut butter noodles! give ‘em a whirl.
